“Our first trip to Mexico was a total bust. We ended up in a car shaped like a barrel that took tourists to tequila factories in Jalisco. We went to Mundo Cuervo and drank Mango Margaritas. We caught some massive tuna off the coast.

We were disorganised and, as a result, we didn’t connect with the country. We had some fun, but didn’t leave bursting to go back.

It was 3 years before we returned and a chance trip to rural Oaxaca changed everything. It set off an addiction, a compulsion, that evolved into a reconverted 15m2 garage in the middle of Sydney’s CBD that some consider to be one of the world’s best bars.
